Shrimp is a shellfish that has an abundance of vitamins and minerals as well as protein. It is versatile, as it can be served in a variety of ways. We recommend trying them over a bed of sautéed chard, which is in season year-round. Check out this delicious recipe cooked over the fire.

Serves 6.

2 pounds of uncooked shrimp
2 cloves of minced garlic
1 chopped shallot
1 teaspoon dry mustard
1 teaspoon salt
½ cup of extra virgin olive oil
3 tablespoons lemon juice
½ cup of minced fresh parsley
2 teaspoons fresh basil
1 sliced lemon to garnish


1.) Cut the shrimp shells down the back to rinse and clean back vein

2.) Combine all remaining ingredients except for the garnish

3.) Spoon the mixture over the shrimp and marinate for at least 6 hours

4.) Drain the shrimp and thread onto skewers, keep remaining marinade

5.) Cook over a hot fire or on the barbecue for 8-12 minutes

6.) Brush with remaining marinade and serve in the shells
