Lentils are a great staple item to any healthy diet. They are full of protein, are inexpensive and have a long shelf life. They can also be purchased in bulk in just about any supermarket, even internationally, and can be enjoyed during any season of the year. However, buying a dry bag of them can feel less than exciting if you have no idea what to do with them.
A lack of experience with this legume is no reason to keep you from adding it into your diet as it can be easily prepared with a little patience and by adding a few simple but flavorful ingredients.
1 cup of lentils
4 tablespoons extra virgin olive oil
4 tablespoons diced white onion
1/2 vegetable bullion cube
a tea kettle of boiling hot water
salt and pepper to taste
1.)Pour the olive in a deep skillet and heat it over low to medium low heat. Simultaneously heat the tea kettle of water until it comes to a boil.
2.)Add the chopped onion and sauté it until it becomes translucent, being very careful not to burn it as this will affect the overall flavor.
3.) Add the lentils, stirring them around and coating them with the oil.
4.) As the water in the kettle begins to boil, add the water in small amounts to the lentils.
5.) Cut the vegetable cube in half and add it to the mixture. Keep adding water until the lentils are fully submerged. Cover the skillet and let the lentils boil.
6.) Return to the mixture after 30 minutes to test the lentils. If they are still a bit crunchy, add boiling water and stir constantly until the lentils match your desired level of consistency.
7.) Remove them from the heat and serve with crackers or whole grain bread.
Another great batch cooking recipe, freeze the lentils for up to a month after cooking.
