Now that summer is really in swing it’s time to chow down on some local summer produce! There are local farmer’s markets in both Pacifica and Half Moon Bay with a bounty of coastal produce and homemade foods. We have chosen three locally grown fruits and vegetables to inspire your summer recipes!
- Beets from Iacopi Farms. Fun fact, those fields you see around the Half Moon Bay Airport? That’s a part of Iacopi Farms! They are well known for their legumes, but their beets are just as divine. Not only a beautiful color, beets are a good source of vitamins and minerals, including manganese and potassium. These edible rubies also contain an unusual, and very nutritional, blend of antioxidants. Try them roasted in a salad with goat cheese and honey-dijon vinaigrette.
- Cucumbers from Daylight Farms. Even if it isn’t hot on the Coastside, we can still enjoy fresh summer eats, can’t we? Cucumbers are a summer staple, going well in everything from sandwiches to gazpacho. And it’s not surprising they are so refreshing, cucumbers are a part of the same plant family as watermelon and honeydew! Try this delicious Creamy Cucumber Dill Salad, it will knock your socks off with its crunch and flavor!
- Olallieberries from Coastways Ranch. Down in Pescadero is the U-Pick area of Swanton Berry Farms. A perfect weekend activity to do with the family! And it’s ok if you haven’t heard of an olallieberry before. You can use them similarly to blackberries, though they have a tarter taste. Whether you bake them into scones or sprinkle them over your morning yogurt, you are sure to become an olallieberry convert! They are an excellent source of vitamin C and fiber, to boot. Try this low sugar Olallieberry and Strawberry Buttermilk Scone recipe.
