Here at Empowered Fitness, we are getting ramped up for next month’s Takedown Challenge! Today’s recipe includes all the important macronutrients, like protein, complex carbs, and healthy fats, you will learn about while doing the Challenge. And it tastes delicious to boot!

chickenstew4 Servings

1 pound of boneless chicken breast
3/5 cup uncooked quinoa
2 1/3 cups of chicken broth
3/4 cup chopped onions
1 cup sliced celery
1 cup sliced carrots
1 cup sliced zucchini
1 cup frozen peas
1/2 teaspoon dried sage
1/4 dried thyme
salt and pepper, to taste



  1. Cut the chicken breast into cubes.
  2. Combine all ingredients in your slow cooker.
  3. Cook on high for 4 hours or on low for 8 hours.
  4. Enjoy!
