Lets talk about farmer’s markets! There’s nothing better than being able to shop a rainbow of fresh fruit and vegetables all grown locally by producers you trust. Smelling, touching and tasting as you choose which seasonal favorites to take home really is grocery shopping at its best. Read on for more ideas with a farm to table fresh food approach!
The key to success in the kitchen is to use the best ingredients you can find. And right now, we’re just starting to see stone fruits like peaches, apricots, and plums, make their way into stores. Take advantage of the season’s bounty and be sure to add a variety of fruits to your shopping basket!
Plums, nectarines and even mango would work in this salad so use whatever you can find; we’ve gone for peaches. The riper the fruit the better, too – the juices will only make the dressing even tastier.
1 lb. peaches (about 3 or 4 fruits)
¼ lb arugula
½ cup feta
1 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
- Make the dressing. Mix the balsamic vinegar and olive oil in a bowl with a pinch of salt and pepper.
- Wash and drain the arugula.
- Wash the peaches and then cut into thick slices. Put them into the same bowl as the arugula.
- Crumble the feta into rough pieces and combine with the arugula and peaches. 4. Pour over the dressing and mix thoroughly but gently. Season again if necessary and put the entire mixture on to a serving plate.
