Breakfast is the easiest meal of the day to overlook. Many of us get into a morning meal rut, eating the same thing everyday or not getting all of our nutrients because we have to rush out the door. Well, we’ve compiled three recipes that make breakfast exciting again! And the best thing is that all of them can be prepared ahead of time, so no excuses about running out of time. Enjoy!

  1. Lemon Poppyseed Pancakes. These pancakes have all of the lemon poppyseed flavor with none of the sugar that the traditional muffins have. Delicious and nutritious, as they say. They are also supposed to hold together like regular pancakes while cooking, even though they aren’t made with flour (protein powder is the secret)! Try them with almond butter on top if you need breakfast on the go.
  2. Tomato Zucchini Frittata. A tasty frittata with an Italian twist. Frittatas are great to make ahead for the week. Just cut a slice, pop it in the microwave, and eat! This is also an easily modified recipe, feel free to use whatever produce you have available. 
  3. Easy Overnight Oats. Overnight oats are a big healthy breakfast craze trend, and for good reason! This recipe is simple to make and delicious to eat.
