This dish is great because not only is it tasty, but its complex flavor arises out of just a few ingredients. The following recipe can be made in just 20-30 minutes.

 

Serves 4.

1 ½ pounds of boneless, skinless chicken breast halves

3 tablespoons flour

3 tablespoons butter

2 tablespoons corn oil

½ cup dry white wine

½ lemon thinly sliced

3 tablespoons chopped parsley

½ teaspoon salt

Pepper to taste

 

  1. Sprinkle chicken with salt and pepper and then dust with flour.
  2. Heat butter and oil over medium heat
  3. Add a few pieces of chicken at a time
  4. Cook over high heat until golden brown
  5. Remove and place them on heated platter
  6. Pour wine into the skillet and scrape browned bits from the pas
  7. Add lemon slices and simmer for one minute
  8. Spoon sauce and lemon over the chicken
  9. Sprinkle with chopped parsley
