After months of soups, casseroles, hot tea, and other heavier dishes, it’s nice to transition into spring by eating lighter, more seasonally appropriate foods. With the end of winter, new vegetables emerge and a series of items become more prevalent in the supermarkets and farmers markets.

 

Check out some of our suggestions below that incorporate seasonal items into healthy dinners.

1.)Roasted Chicken with Spring Vegetables. This is classic dish with a bit of spring flair that will satisfy most appetites. This recipe adds radishes and dill, ingredients that are fresh from the garden.
2.)Pasta Primavera. This dish has spring in its name, “primavera” being the Italian word for spring. It is chock full of vegetables and although the recipe calls for fettuccine pasta, it can be made with zoodles, or zucchini noodles, as well.
3.)Spinach, Hummus and Bell Pepper Wraps. The crunchy combination of bell pepper and spinach mixed with hummus is excellent in these no fuss wraps. For extra variety try it with different kinds of wraps.
4.)Tortellini, Chicken and Arugula Salad. Mixing together pasta with lettuce like arugula may sound a little strange, but the tangy flavor of the greens goes well with the hearty pasta. You can make it gluten free by substituting in quinoa or brown rice for the tortellini.
5.)Salmon with roasted asparagus. Asparagus is sometimes known for marking the arrival of spring as it is normally planted early in the season. In this recipe, the tender taste of this vegetable goes deliciously with salmon.
