As the weather starts cooling down it’s time to take advantage of the fall season and all the different produce you start to see at the farmer’s market and and in stores. Use this opportunity to switch up your normal soup recipes! Most of the soups on the list can also be a complete meal by themselves.
- Barley and Lentil Soup. This soup has a slightly Indian feel, and the coconut milk used has good fats. Balancing it out with carbs is the healthy fall favorite, barley. Exotic, healthy and unique sums this up.
- Pumpkin and Chicken Chowder. You may already have bought your Halloween pumpkin, but put the fall vegetable to use in this soup, which says “fall” in every bite. A rainbow of vegetables makes it colorful and fun for kids too!
- Thai Beef Soup. Even though it has none of the strong flavors or spiciness of a normal curry, this soup has ALL of the flavor you’d expect. A good starter recipe for Thai food newbies.
- Southwestern Turkey Soup. It wouldn’t be fall without some turkey! What makes this different is the Southwestern flavor. Avocado in soup is also a neat twist and this recipe can be played with to fit your taste.
What’s great about these fall recipes is that you can even meal prep the basic ingredients with your slow cooker or make large batches of the recipe to pop in the fridge for quick lunches and dinners! Share your favorite soup recipes that remind you of fall in the comments.
