Slow cookers are mostly linked with hearty wintertime food, but the summer season really gives them a chance to shine. They do the hard work of cooking and mixing flavors while you’re busy doing other things. Here are a few summer time recipes that show how these versatile these super appliances are with everything from breakfast to dinner.
- Frittata with Zucchini, Tomato and Feta. Who could say no to a breakfast recipe that’s so good you can eat it all day? This Mediterranean-inspired dish has a rich flavor of thanks to the combo of thyme and Greek feta.
- Vegetarian gumbo. Take advantage of the fresh summer vegetables at your local farmer’s market with this reimagined vegetable gumbo. Paired with brown rice, it makes a filling and healthy dinner that can simmer while you’re busy doing other things.
- Summer Chowder. “Summer in a bowl” could be another way to describe this dish, which also uses fresh summer veggies. Be sure to use turkey or Canadian bacon, or skip them altogether to make it 100% vegetarian.
- Barbacoa Brisket Tacos and Burritos. One of the great things about slow cookers is bringing out the flavors that you wouldn’t get with a shorter cooking time. This summery, zesty recipe manages to taste both hearty and light, especially with some sliced avocado added.
