Welcome to the GetLean Challenge Diaries! This blog series follows one GLC participant during the inaugural Challenge this fall. Carmen’s GetLean Challenge journey will be accompanied by delicious recipes and helpful nutrition tips that are GLC-approved!

It’s the start of week 4! I’m pretty proud of myself, especially after one of the most tempting days of the year: Halloween! I didn’t even flinch at that the thought of all the candy that would be around for the holiday. Actually, I feel like sweets are the last thing on my mind. I have found that I really enjoy natural sources of sweetness now that my taste buds have re-acclimated to a healthier diet. One of my favorite meals is having Greek yogurt with various toppings, including fruits and nuts.

The GLC has also been great for my activity levels. Now that I have created a routine, I feel like I “have” to exercise everyday or I just don’t feel right. Before the GetLean Challenge I didn’t want to exercise because I was too tired, but now it’s something I do to keep up my energy levels. This program has been a real eye opener for me! I can’t wait to see the final results at the end of this week.

Autumn Baked Apple Bowl (3 BLOCK meal)

Ingredients:

1 cup of Non-Fat Greek Yogurt (3 BLOCKS of protein)

1 Apple (2 BLOCKS of carbohydrates)

Granola, 9 grams of carbs worth-check label (1 BLOCK of carbohydrates)

6 Pecans (2 BLOCKS of fat)

1 tablespoon of Pumpkin Seeds (1BLOCK of fat)

1 teaspoon of cinnamon

½ teaspoon of vanilla powder

Recipe:

  1. Peel and core your apple. Sprinkle it with the cinnamon and vanilla powder.
  2. Place the apple in a small bowl and heat it for 3 ½ minutes.
  3. Fill the center of the apple with yogurt and use the remainder to cover the outside of the apple.
  4. Finally, scoop your granola, pecans, and pumpkin seeds on top of your apple.
  5. Enjoy!
